Understanding Vacuum Packaging
Vacuum packaging works by removing air from a bag or container before sealing it. Removing oxygen significantly slows the growth of aerobic bacteria and mold, and reduces oxidation — the primary cause of freezer burn and flavor degradation. The result is food that stays fresher longer in the refrigerator, freezer, or pantry.
The two main machine types — chamber sealers and external sealers — differ in how they create the vacuum. Chamber sealers place the entire bag inside a sealed chamber and evacuate the chamber itself, which allows them to handle liquids without drawing them into the machine. External sealers (also called suction sealers) draw air through the bag's open end, making them more compact and affordable but less suitable for liquid-heavy contents.
